A native of San Francisco who grew up visiting wine country with his parents, Adam Spiegel talks to Drink Tank host Gibson Thomas, publisher and editor of Edible Marin & Wine Country. After losing his tech job in the economic downturn of 2008, he says he knew his next job needed to be creating something he could touch and feel. See how he became a distiller, and why he chose to make brown spirits, in particular.

Adam has a clear sense of the storied history of the spirits he and his team produce, and the responsibility of staying true to the craft while continuously experimenting with new ingredients and methods.

Hear why he believes his three West of Kentucky Bourbons embody California terroir (think smoked California Cherrywood), and his thoughts on shunning GMO ingredients in his spirits.

Opened in 2010, Sonoma County Distilling Co. was one of the first 200 distilleries in the United States. Today there are over 1,300.
